Feeling Scone-y

It is the first Monday back to the routine after our holiday break and I have mixed emotions.  We had such a nice time together this vacation that it's hard to have to face the world and our 9 to 5 (make that 6 to 10) lives!  However, I recognize that it's time to start routine again and there is something inspiring about making changes and starting a fresh new year.  I have lot's of thoughts about little things I'd like to change and/or accomplish in 2011.  But for now I'll start with scones.
I love scones!  And by scones I don't mean those hard, dry little lumps that can sometimes be found looking forlorn in the pastry case at your local coffee shop.  No, I'm talking about fluffy, moist biscuits of goodness with surprise flavors tucked into them.  If your feeling really fancy you can adorn your scone with glaze or drizzle of some kind.  After the holiday gorge I'm feeling like something not too terribly sweet and maybe tangy is in order.  Lemon Ginger scones with lemon curd?  Yes! 



So, I'm not going to actually post the recipe because I haven't actually made them yet and ya know I just would feel like a fraud and what if they don't turn out good?  But you can go here if you're super curious! 
I can however post my fantastical recipe for microwave lemon curd!  I've tried it a few times and it's so good and easy - really easy. 

Microwave Lemon Curd
Original Recipe Yield 2 cups
 

Ingredients

  • 1 cup white sugar
  • 3 eggs
  • 1 cup fresh lemon juice
  • 3 lemons, zested
  • 1/2 cup unsalted butter, melted

Directions

  1. In a microwave-safe bowl, whisk together the sugar and eggs until smooth. Stir in lemon juice, lemon zest and butter. Cook in the microwave for one minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a metal spoon. Remove from the microwave, and pour into small sterile jars. Store for up to three weeks in the refrigerator.
And now it's off to the routine!  Grocery shopping, appointment making, and shuffling of kiddos await.  Wishing you a very happy first Monday of 2011!

  1. I applaud your diligence. You are up and at them bright and early. I also would beg for a taste of those scones whenever you make them.
